Mexican Inspired Corn

Total time: ~20 mintues

Serving size: 6-8 people


Ingredients:

  • Corn

  • 1/4 mayo

  • 1/2 lime

  • 1 tbsp Tajin

  • 2 tbsp parmesean

  • salt and pepper to tast


Directions:

  • Steam corn for ~10 minutes

  • While corn is cooking, mix together all the ingredients in a bowl. I did not measure when I made this, so make adjustments as you see needed.

  • Once the corn is done, put them on the grill to get chared and while it is still warm, paint the may mix on it; this will allow the cheese to melt a little.

  • Top with more salt, pepper, tajin and parmesean.
